I'm excited! A new crockpot recipe that's healthy! They are hard to find! Sounds yummy! Anyone know anymore??

the previous poster asked for other crock pot recipes, this is one of my favorites. i did notice that they gave the instructions for the stock pot version, not crock pot, but it's the same, just cook on high for about four hours. and i often cook up half a lb of bacon to toss in instead of a ham hock, it's great that way too.

Lol, I love the lion food idea. I might have to try that with my little guy, he LOVES lions! The recipe sounds great... and easy. I think I'm going to try it soon. Thanks!

Crockpot
1 lb ground beef
1 can kidney beans
1 can corn
2 cans diced tomatoes (we use 1 can italian style and 1 can zesty style)
1 package taco seasoning
Brown ground beef and throw it all in the crock pot. Do not drain cans dump in whole. Cook on high for 3-4 hrs or on low for 6-7 hrs. We serve with sourcream and cheese or let the kids dip it out with tortilla chips.

this sounds like mine.. other than doing chicken and dice it up or shred it.. I just boil the chicken and use that for a stock. it's super yummy..

Sometimes I like to add rice to the Taco soup and it changes it to a wonderful burrito filling. Two meals out of one meal just by adding rice and having tortillas to wrap it in.

Great addition to my crockpot recipes. I made a few differences. Frozen kernel corn, not a can. Dried beans, no a can. I was short on time so I dumped everything into the crockpot (even the raw ground turkey), added a cup of water to help soften the beans, left on low for 4-5 hrs. The beans were still firm and chewy so I'd recommend turning on high or using the canned beans like the original post. (When I got home I used a fork to 'crumble' the chunk of ground turkey). Grated cheese on top, delicious! I cut pita bread into small triangles and baked 375* for 5-6 minutes until golden and crispy. Its hard to find healthy tortilla chips so I make my own!
