What to do w/ all these tomatos???

My neighbors keep giving me gobs of tomatos. I know you can make and freeze spaghetti sauce. And, I could make salsa, but I don't have a good recipe for either. Can anyone help???

You can freeze the toms until you get enough to do a sauce also. You wash and dry them, put them on a cookie sheet/plate in the freezer till they are froze through, then just put them in a ziplock freezer bag until you want to use them!

just peel them and can them whole.
you can do a little as 1 pint or several quarts that way.
also i use the salsa recipe from here

she says it doesnt need water bathed but i do it anyways.
better safe then sorry. i have made 35 quarts of salsa so far.
we love it.

I LOVE roasted tomatoes and they freeze amazingly well too! I dare you to make these and not eat half right out of the oven! Add a little cheese to these on a slice of french bread and you are set!

I second the dried tomatoes. low on labor. they're great in pasta with pesto or on grilled cheese sandwiches

When my tomato plants go crazy and all ripen at once, I roast the extras and then freeze them. That way I can make tomato sauce or salsa any time of the year with delicious garden tomatoes!

INSTRUCTIONS:

Preheat oven to 425F.

Halve your tomatoes lengthwise or quarter the super huge ones (leave cherry tomatoes whole).

Lay tomatoes in a single layer, cut side up in greased baking dish or cookie sheet.

Drizzle with olive oil and sprinkle with kosher salt and fresh ground pepper. If you want, season them with oregano and basil (though this will reduce the number of dishes you can make with them).

Roast in 425F oven for about 40 minutes or until wrinkly.

To freeze them, wait till they cool and then remove skins. Double bag in ziploc bags, removing all the air with a straw.
