Making homemade hot pockets

a while ago (within the last 6 months) someone had started a thread on things you can freeze, I was pretty certain I subscribed but it it not in my subscriptions i also can't find it by doing a search.

Anyway, someone mentioned rolling out biscuits and filling it with eggs and such and then freezing them for easy reheating. I was wondering if anyone knows what I am talking about and where I can find the recipe?

I will try the recipe sites if no one knows, just thought i would try and find it because they sounded so yummy and i have the biscuits and eggs, lol

Re: Making homemade hot pockets

i mentioned this. just roll out some buscuits so they are thin, then put some cooked scrambled eggs, cheese, ham, whatever you want. top w/ another rolled out biscuit. press a fork around the edge to seal. then bake until the dough is cooked. you can either eat them or freeze them. i froze mine and dh would take one to work and by the time he was hungry it would be thawed so he just popped it in the microwave to heat it up.

I've used pizza dough and meatball fillings in the past. They turned out nicely but there weren't any left over to try and freeze.

Re: Making homemade hot pockets

I make gf hot pocket type things this way. I use a croissant dough and fill with meat and cheese, then just bake as the directions for the croissants. I haven't done it for a while and need to do it again!

Re: Making homemade hot pockets

I have a few of those "recipe creations" refrigerated dough rolls (had a coupon and they were on sale). I am going to try this! I am worried about how they will taste when thawed, though . I guess I'll never know until I try
