Don't know if you still need recipes. but here are a few we do.
Fried potatos, simple enough
potato salad, boil whole potatos till soft. Cool. peel cube and put in a big bowl. add mayo, relish, hard boiled egg, mustard and a bit of sugar stir and keep cool
when grilling cube potatos add a bit of oil, salt and mixed seasoning. Can also add a bit of onion. Put in a foil pack and throw on grill.
mashed potatos. Boil cubed potatos, drain add milk and butter mash.

Cook in a preheated 450degree oven for about 20-25 minutes, turning once.

My boys gobble these up!

I make a lot of potatoes, so I could probably dig through some recipes.

Re: Need Potato Recipes

Let's see, here are some more:

Creamed Peas and Potatoes
-1 large package petite peas (I usually use fresh peas from the garden, much better.)
-10 to 15 large red potatoes, or russets, diced
-2 c. milk
-1/3 c. butter
1/3 c. flour, or more if necessary
salt and pepper to taste

Make cream sauce by melting butter. Add 1/3 c+ flour; stir to blend. Add milk a little at a time, while stirring. Stir constantly until thick; set aside.

Cook potatoes in water until almost done (right before fork tender). Add peas and cook until peas are done. Drain and add to cream sauce. Season with salt and pepper.

*These were my fave growing up. They were so good with potatoes and peas from the garden, but are still good with storebought and frozen. Often I serve this as a main course, but can also be a sidedish.

Funeral Potatoes

-6-8 large potatoes
-2 cans cream of chicken soup
-1 pt. sour cream
-1/2 c. butter
-2 c. grated cheddar cheese
-1/3 c. chopped onion

Boil potatoes and cool; then peel and grate. Mix soup, butter, sour cream, onions and cheese. Heat and melt together. Mix well with grated potatoes. Pour into a 9x13 inch dish.

Bake at 350 degrees for 40 minutes.

I have a bunch more, but these are both really good...
