My Mood:
How would you meal plan this?

My dh's schedule is changing and I have to provide dinner for him to take.

Monday-needs dinner to take available in the morning
Tuesday-dinner home
Wednesday-dinner home
Thursday-needs dinner to take in the morning
Friday- home for dinner

Not sure if I should cook two dinners on Sunday for Monday.

Maybe cook his portions separately. This would reduce the amount I make for dinner when he's not home.

How would you do this?

Will he eat leftovers? If you can make enough for leftovers two days a week, that could cover it. I think that's what I would do, but I know some people won't eat leftovers, so that would make it trickier.

Can he eat out those two days? Is you dropping off Dinner an option? Otherwise it would have to be left overs because with way the food would be 24 hours old before he ate it anyway. I personally wouldn't cook two dinners on Sunday and Wednesday

I was going to say leftovers as well or maybe a cold dinner. My DH takes leftovers for his lunches and when we donít have any leftovers he packs a cold lunch. I know not everyone will eat leftovers. I usually donít.

Does he have access to a microwave or some kind of heat source?

You could make a big batch of individual freezer meals that he can grab. Like burritos or mini frozen pizzas. They can thaw in a cooler or something then he just has to heat it up. Or if he is a salad guy you could make mason jar salads for those nights and you can make them ahead of time. Or he could do overnight oats if he didn't mind breakfast for dinner.

I would do leftovers, sandwiches, yogurt with granola and fruit....essentially the same kinds of things I would do for packing a lunch.

He will eat leftovers. He has access to a microwave and possibly a stove for reheating.

He will eat leftovers but sometimes we don't have any. I think I need to increase what I make on Sundays/Wednesdays if I go that route. Our leftovers are so unpredictable.

He is allowed to eat in the cafeteria but because he's low sodium he won't really be able to eat anything there except salad. So he'll eat a big salad as part of his dinner.

I can send him with a canister of oatmeal so he can always have something in a pinch.

I was looking at those mini crockpots and wondering if he could use one of those.

Mini crockpot would be a good idea - you could put small amounts of soup or something in a Ziploc, freeze it, and he could take it with him Monday morning and put it in the crockpot. Otherwise, I'd do individually portioned freezer meals. Make a bunch in advance and he can take them along whenever he needs. If they are frozen, they'll thaw by dinner time and be ready to be heated (though not in this weather).

Do beans freeze well? He'd love beans.

I'm wondering if he can get fruit there. I know they have fruit juice. Yogurt would be good for snack.
