Yesterday I made homemade noodles for my chicken soup for the first time. I've made egg noodles before, but not for my soup. I put a large container of soup into the freezer as well as half the noodles, and took a quart down to MIL. I need to up our frozen soup stash for the fall as the produce comes in or I finish the 6 whole chickens in our freezer.
This morning, I tried out a ww pumpkin chocolate chip muffin (its made with honey and its supposed to be carob chips but I only have chocolate chips). The other day it was pumpkin dip on graham crackers. actually between the 2 snacks, I've only used 1 bag of pumpkin.

I've been on an oatmeal kick.

Soak some rolled oats in a jar before you go to bed, and you can have it for breakfast the next morning with no prep. Add anything you want.

I'm also a huge fan of crepes. You can make the batter ahead of time, and they take no time to cook. Fill them with anything. Alot less sugar than pancakes as well. My favorite thing to fill them with is fresh berries or on the more savory side, mushrooms.

Did some pantry challenge nonsense today. Used 4 cans! Plus got rid of some of my rice.

Jumbalaya with canned ocra and home canned tomatoes.

Beans and rice, and I substituted the egg in my cornbread recipe with apple sauce. turned out cakey and delicious.

I made chicken jumbalaya yesterday too!! The other day my oldest & I chopped up a bunch of bell peppers & broccoli, onion & carrots to freeze so I can just drop them in a pot for this meal! I steam the rice separately in our rice cooker then add it when everything is done
