After some food water bathing it was finally defrosted enough to get the giblets out. I think by tomorrow we should be good.

Prepped both dressings.

I'm taking a bit break. I need coffee.

I enjoy Thanksgiving. I don't enjoy the "what to do with the leftover" stage, the cleanup, and the cramming everything into the fridge---and the spills!" But, happy that all was delicious and all went smooth.

I was worried about this since our fridge is smaller this year. It turned out that it is laid out much better and were easily able to access leftovers. Carcass I threw in the chest freezer. Ended up tossing out only a small amount of dressing.

The clean up everyone helped with this year so it went easier than I expected.

Is anyone going to tweak things for next year? Maybe we should share here and that way we have a reference for next Thanksgiving.

Notes to myself:

I might actually make a packaged stuffing in addition to all the homemade. I think mine was good but people are accustomed to a saltier version.

Cornbread stuffing was really good but I actually think people might enjoy an actual cornbread or cornbread muffins.

You got to make more gravy girl!!!!!!!

If you decide not to baste next year keep your eye on the turkey as it cooked way faster than expected and double the stock in pan for more gravy!!!!!!!

Also make two pans of roasted veggies because those disappeared too soon.

I started a Google doc with recipes and timing and I need to finish it up and have it on hand for next year.

I had a lovely Thanksgiving and I hope you all did too.

Looking forward to your notes.
