What to do with a lot of peaches!!!

I just got a 1/2 case of bruised peaches from the farmer's market for $5. Good deal, but I'm not sure what to do with them. (Actually there are a couple of nectarines and apricots, too) All I know is that they are super ripe and I have to deal with them today. Other than just straight eating them, WWYD?

thx.

Re: What to do with a lot of peaches!!!

I made baby food out of the ripe ones on my counter yesterday! but if your LO doesn't eat baby food youcould make peach yogurt, peach frozen yogurt popsicles/cubes for your older LO, peach jam or peach cobbler...I've heard of ppl making a peach puree for pork dishes and using it as a sauce (never tried it personally though)

I would just slice 'em up & freeze them for anything you want later! get them stored properly before any goes to waste!!

i believe you can store them sweetened or unsweetened....just do an internet search or call your local/county extension office for info!!!

I'm jealous!!!!

Re: What to do with a lot of peaches!!!

That is what I would do too. I slice them and add 1T fruit fresh to every 4c and freeze in bags or freezer containers. I also run it through the colander and can it for adding to our yogurt sometimes. We also make frozen yogurt every time we get some fruit.
I also make jam and peach honey with them. We can't get enough peaches here. I am jealous too. I have bought 2 half bushels this year and paid $14 and $15 dollars.

Re: What to do with a lot of peaches!!!

Not something you want to do with all the peaches...but I had to tell you..this recipe for peach cobbler is to die for!! AND super easy!! Yum!

Paula Dean's Peach Cobbler

4 cups peeled, sliced peaches
2 cups sugar, divided
1/2 cup water
8 tablespoons butter
1 1/2 cups self-rising flour
1 1/2 cups milk
Ground cinnamon, optional

Preheat oven to 350 degrees F.

Combine the peaches, 1 cup sugar, and water in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat.

Put the butter in a 3-quart baking dish and place in oven to melt.

Mix remaining 1 cup sugar, flour, and milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir. Spoon fruit on top, gently pouring in syrup. Sprinkle top with ground cinnamon, if using. Batter will rise to top during baking. Bake for 30 to 45 minutes.

To serve, scoop onto a plate and serve with your choice of whipped cream or vanilla ice cream.

Re: What to do with a lot of peaches!!!

Oh, today I made peach honey. It is yummy! It does have a lot of sugar, but we use raw sugar and at least there will be some redeeming qualities for the sweets now. It will be yummy on pancakes! I can't wait to give some away for Christmas.

We had the same problem here last week! Guess that's what happens when you've got a grandma with several peach trees and nothing to do with them.

We made pie. I also froze some to use later in baby food.

Re: What to do with a lot of peaches!!!

I was just coming here to ask the exact same question. I just got a box of super ripe peaches from my mom today. I don't know how to can, but was thinking of just slicing them up and freezing them. Thanks for all of the other good ideas too!
