Looking for meal ideas - inexpensive and few ingredients?

Sunday through Wednesday next week we will be staying at a time-share resort about 30 minutes from our house. We need to keep this vacation very inexpensive. We will have a full kitchen but will obviously need to bring out own food. I'm looking for ideas to have for lunch and dinner that won't use very many ingredients. Or something I can make ahead?

I know we have some frozen chicken breasts in marinade that we will bring, but will probably have leftovers from that to use in something else.

So, what would you plan for meals??

I would make several meals and freeze gem ahead of time. Lasagna, soups, spaghetti or chicken spaghetti, etc. One night you could do salads and baked potatoes. We like red beans and rice with garlic bread. A night or two you could do hot dogs/hamburgers outside. Hth!!

pasta salad is a good one.
pasta
olive oil
lemon juice
salt/pepper
whatever veggies you want in it. You can make a big batch and take it to refridgerate. I like to put red peppers, cucumber, and fresh basil in mine. You can also throw in chicken, egg, etc..It's my new favorite meal in this hot summer!

My family loves chili bake.

I layer canned chili beans,crushed tortilla chips,cheese. Repeat layers and top with a can of enchilada sauce. Bake. Serve as is or top with sour cream,lettuce and salsa/tomato.

Grilled Ham and Cheese Sandwiches are another thing we do while on vacation.

Soup and salad?

Will there be a grocery store close? If so, we got out really cheap on food one year because I would go before closing and get markdown deli food,produce,veggies etc. I made our meals the next day based on what I found on sale the day before.

I make a casserole kind of, one can black beans, one can corn, chicken, salsa, cheese and corn tortillas. Rip the tortillas into pieces, mix it all and bake. Mmmm.

I like cheesy chicken rotel rice...

Layer...

Cooked chicken diced
Can of rotel
2 cups cooked rice mused with.cream of mushroom soup.and a canful of milk.
Top w/ cheese

Bake till bubbly. Can be made a head.

We always stay at a timeshare condo and cook all our meals. We just went to the beach a couple weeks ago. We did burritos (ground beef, refried beans, taco sauce, cheese, tomatoes, sour cream in a tortilla). We made enough for 2 meals. We did ham sandwiches for a couple meals. And we did rotel pasta (rotini, rotel and velveeta) for a couple meals.
