i have a surplus of eggs give me your best recipes using lots of eggs!!!!

I make frittatas with lots of eggs - usually 8-12.

Basically, the combo of ingredients varies with what I have around but I cook up some bacon and set it aside (totally optional, they can be veg). Then sautee a little onion and potato (or leek and potato) then add some greens and cook until a little underdone (spinach, chard, asparagus, zucchini - all will work depending on what is in season). You can also add some mushrooms or red peppers at this point. Then, beat your eggs with a dash of milk or cream and stir in some cheese of your choice (cheddar, parmesan, goat cheese...whatever you want that goes with your veggies). Pour over the sauteed mixture, crumble in the bacon and add some extra cheese, salt and pepper to the top. Also, add fresh herbs at this time. Parsley, thyme, sage, chives.... Then finish it all off in the oven at about 350F until just set (usually like 15-20 min). Great as a meal with salad and toast and leftover for breakfast with fresh fruit. I do this in a cast iron skillet.

It is very flexible - if my instructions don't make sense I can elaborate!

We do a couple things.

1 - egg sandwiches - scramble eggs, toast with butter. Sometimes I add crumbled bacon or sausage or cheese to the eggs. We've done slice of bacon too instead of crumbled.

2 - can't remember where I got the recipe but it's a tomato egg bake - layering tortillas, scrambled eggs, tomato slices and bake it. We also add bacon and cheese. Kinda reminds us of a BLT.

DH likes to take hard boiled eggs for work.

I make egg mcmuffins and wrap each one in a paper towel and stick in the freezer. Just thaw for breakfast. Just like McDonalds but less greasy!

You can crack eggs individually in ice cube trays and freeze them for later use. Just thought you'd like to know.
