I need help with my roux

Your WHAT?! My DH would say...
I am so proud of myself. I recently learned how to make a bone soup with leftover whole baked chicken. I am trying tonight to kick it up a notch- DH LOVES Chicken n' dumplins, and I am trying to best my MIL's "secret" recipe.
So I made a roux with equal parts chicken fat that I skimmed from the top of my broth, and flour, then mixed in the broth, but I clearly didn't make enough roux. So, two questions,

How do you know how much roux to add to the broth part to make it thicker?? (what is the roux to broth ratio?)

And, if I dont have enough chx fat to make the amt. of roux I need, can I add butter (or shortening ) for the "fat" part?

Oh, and I live in MD, so if anyone wants to help me clean up the kitchen...

I always make my roux with equal parts butter and flour - have never had a problem with it so far! We used to live in MD, but now in FL, so you're out of luck with me helping with clean up!

- though I usually add milk, too (because I only use roux for baked mac & cheese).

Sorry I don't have any advice on the amount to use. I guess it's one of those things to experiment with until you find you've gotten it right?

OK, will keep tryin. thanks for the tips, and the suggestion about the milk. DH gave it good reviews, but did comment that it didn't seem very thick.
Maybe omitting the Chx. fat will help save us early-onset heart disease, too!

I ALWAYS use bacon grease for my roux. Equal parts bacon grease and flour and brown over med high heat

i use butter or olive oil in my roux
i don't know a good ratio for broth to roux though

I use EVOO and flour for my roux, also.

I also do equal parts butter to flour browned over Med low heat.
