Anyone have good Egg-Free Breakfast Recipes??

My husband is hosting men's prayer meeting at our house tomorrow morning (6:30-7:30) as our pastor is out of town. This happens every few months, but since my son has come down with an egg allergy I don't have them in the house anymore. Everything I can think off has eggs in it... I try to make something the night before that he can just heat up (or eat cold) in the morning. Cinnamon rolls have worked, but they take awhile. I need to make something NOW!

I make pancakes egg free. I can't tell you measurements though, cuz I just eyeball everything. Self rising flour, vanilla rice milk (we can't do dair either, so if you can, regular would be fine), and instead of eggs, I use bananna puree. Though I would think just a good mashed up banana would be fine. You need to add a little oil because no eggs takes out fat. Anyway, you just put in the flour and add milk until it is slightly thicker than regular pancake batter, then add the banannas and just a splash of oil. If you need to thin it up a litte still, go ahead and add more milk now. Fix them as usual.

I've been using EnerG egg replacer. It works great in breads, muffins, cookies, etc. I found mine in our regular grocery store (but they carry lots of health food stuff). The box costs around $5 but mine has lasted me for around a month now.

I would find a vegan cookbook online and see what they use as a binder other than egg. That is what the egg is doing anyway.
