I have a recipe that I am going to try out for the first time this week. It calls for whole wheat flour along with all purpose flour. That adds to the health quotient.
It looks pretty easy, let me know if you would like me to post it!

I can't give u a recipe w/ no fat or anything like that....

But to make my son's treats more healthy I grate up zucchini really fine and put them in to my batter and make "chocolate cupcakes" and he has no idea it's in there. LOL

o i wouldnt mind some fat, david sure indeed needs it he too skinny (almost 4 and at 28lbs)

Here it is:
Again, I haven't made it yet, and I noticed that it is actually ww pastry flour and not ww flour. I bought whole wheat this week, so I will be using that. I'll let you know how it turns out.

Old-Fashioned Chocolate Cake

Cooking oil spray
1c unbleached all-purpose flour
1/2 c whole wheat pastry flour
6 tbsp cocoa
3/4 tsp baking soda
1c sugar
pinch of salt
1c cold water
1/4 c canola oil
1 tbsp white vinegar
2 tsp vanilla extract
Set a rack in center of oven. Preheat oven to 350. Coat 8 inch square baking pan with cooking spray and dust lightly with flour.

In a medium bowl, sift together, flours, cocoa, and baking soda. Whisk in the sugar and salt. In a smaller bowl combine water, oil, vinegar, and vanilla. Pour the wet into the dry ingredients and whisk until the batter is smooth. Pour into pan.

Bake 30-40 minutes or until cake pulls away form side and toothpick inserted into center comes out clean. Cool cake in pan for 10 minutes, then on rack until cool.

This cake is low fat, low callories and even DH likes it (I left out the low fat part)

Yum Yum Low Fat Chocolate Cake

INGREDIENTS

1 1/4 cups all-purpose flour
1 cup sugar
1 cup baking cocoa
1/4 cup cornstarch
1/2 teaspoon baking soda
1/2 teaspoon salt
4 egg whites
1 cup water
1/2 cup corn syrup
2 teaspoons confectioners' sugar



DIRECTIONS

In a bowl, combine the first six ingredients. In another bowl, whisk egg whites, water and corn syrup. Stir into dry ingredients. Pour into a 9-in. square baking pan coated with nonstick cooking spray. Bake at 350 degrees F for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Dust with confectioners' sugar.
