Question What to do with a small bunch of beets?

We got a vegie box from our local food coop, it has a small bunch of beets with green on them in it. I have never had a bunch of beets before and I am wondering what I should do with them? I know our guinea pig might like the greens. Any ideas? should I steam them?

Beet salad: peel and boil beets until soft, then cool and grate them on a cheese grater, add lemon juice and finely chopped cilantro.

Greens: saute onion in olive oil, add washed greens, make a dressing out of cumin, lemon juice, and crushed garlic, add to pan, steam greens until soft.

Yum that sounds great! We also go salad green with our vegie bag!

Boil and peel. Add to a salad of arugula. Top with goat cheese and a balsamic vinegrette. You can also add cut up apple or pear.
