Lucky you!! We wont have any until the end of the summer, early fall. Boo Hoo.

Last year we did

Fresh Salsa - I just use the seasonings from Walmart and add tomato and onion.

Tomato sauce to use and freeze. DH tried several different recipes he found online. But we froze enough sauce to use for recipes all winter!!

I froze some tomatoes that I just boiled for a few minutes.

Then in the end, when we were sick of it all. We just washed them and tossed in a ziplock bag and froze. These worked great for in soups and stuff.

Roast them and freeze them if you can stop yourself from eating them all! They are SO freaking yummy!

Due to our horrid spring I may not get my tomatoes this year

But last year we had fresh salsa every day!

Tomatoes
Onions
Pepper (jalepeno or hotter)
cilantro
Lemon juice
Salt

You can freeze your tomatoes also. Slice them in half, put them in freezer bags and you are done! We do this every year so I can make fresh sauce.

ETA: I see other people suggested freezing lol.

I love cucumber and tomato salads.

thanks i didnt realize you could freeze so easily. i thought there was a lot more work to do and thats hard to do with 3 lil ones.

It seems like there are tons of ways to freeze tomatoes. You can make it as easy or hard as you need it to be!! lol We tried about everything last year. My DH thinks we planted way too many plants, but I loved not having to buy sauce all winter.
