Need help with cooking brown rice

I want to make brown rice to go with my yummy chicken recipe tonight.

The last time I made it, I made it according to the package directions -- 1 cup of rice, 2 cups of water. Bring to a boil over high heat. Cover, reduce heat to low, simmer for about 45 minutes.

I did that, and it wasn't quite done. It was still really crunchy, there was still water left in the bottom of the pan, so it was really wet.

Any suggestions? Just let it sit longer, like an hour maybe, over low heat for simmering?

Hmmm...Are you lifting the lid after you cover it to simmer? Don't lift the lid off at all. And I just looked at the directions on the brown rice I have it says 1C of rice to 2 1/2C. water.

I don't follow "directions" for brown rice lol. 2 to 1 water to rice ratio, like you had it. I bring it to a boil, then bring it down to a simmer, until the water is all gone. Never had a problem with it.
I know if you want a "softer" rice you can reduce the temperature a bit more and the water will take longer to be used. Personally we don't mind it either way so I tend to vote for faster. HTH!

Nope, not lifting the lid at all. We eat a lot of rice, but I want to do more brown rice and less white.

Directions on my box do say 1 cup rice to 2 cups water (same as my jasmin rice).

I don't mind it a little al-dente... but the rice I cooked before was just not done. It was HARD crunchy.

I have it turned down to lowest of low settings. So, like you said, trying a lower setting and a longer cook time. Thanks.

you can always do it the way my mom does - she cooks it like pasta!

set a pot of water to boil, add the rice and boil until it's done, then drain off the extra water.

works for her and tastes fine.

i always do a 2:1 myself, but i have a rice cooker.

I always do a little less water then 2 to 1 and I simmer without the lid on. I buy the Uncle Ben's wholegrain brown rice and it takes 20ish minutes to cook through.
