favorite lentil recipes?

I would like to start cooking more lentils and would love some tried and true favorite ideas.

Here's my favorite.

Easy Lentil Loaf
From "The New Farm Vegetarian Cookbook".

Cook 1 1/2 C of rinsed lentils in 3 1/2 C of water until tender.
Partially mash lentils and mix with 2 medium onions that have been sauted in a little water. Add to the onions and lentils:

2 C cooked rice
1 tsp garlic powder
1 tsp salt
1/4 C catsup or barbecue sauce
1 tsp sage
1/2 tsp marjoram

Press into a sprayed loaf pan and spread catsup or barbecue sauce over the top.
Bake for 1 hour.

Mjaddra - it's a Lebanese dish. Super cheap!! And it makes a ton of food!

1 C olive oil
2 large onions, sliced into thin rings
1 3/4 C Lentils
6 C water
2 C rice
1 Tbsp Salt

Brown the onions in the oil, until crispy. Remove most of the onions onto a paper towel lined plate, to crisp up. Remove the pot from the heat for a minute to cool, so that when you add the water you don't get splattered. Add 6 C water and the lentils (rinsed and picked over). Bring to a boil. Cook 15-20 minutes, covered. Add the 2 C rice, and return to boil. Add salt, then turn down the heat and simmer for another 15-20 minutes until rice is soft.

Serve with plain yogurt, using crispy onions as garnish. It's great hot or cold, and goes well with a fresh salad.

I don't have recipes on hand but my 2 favorites are lentil sloppy joes and lentil enchiladas. Just replace the meat with lentils. YUM!

I LOVE sprouting my lentils. Takes a few days but so worth it!
