I love granola bars but I really love CHEWY granola bars. I make these up and then wrap them in tin foil and then store them in the freezer or fridge.

Chewy Granola Bars

1 cup melted butter
1/3 cup brown sugar

1 cup honey

1 teaspoon vanilla extract

4 cups oatmeal (doesn't matter if it's quick oats or old fashioned)

1 cup rice krispie cereal

1/2 cup whole wheat flour

1 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt (optional)

additions: 1/2 cup nuts (sunflower, pecans, walnuts, almonds) 1 cup chocolate chips 1 cup cinnamon chips 1 cup raisins (or other dried fruit, cherries, dates, prunes)

In large mixing bowl, combine melted butter, brown sugar, honey and vanilla extract.

In separate bowl, combine oatmeal, rice krispie cereal, flour, baking soda, cinnamon, salt; mix well. Add any additions (from above) and mix well.

Pour honey mixture over oatmeal mixture and stir well. It will be very sticky. Spread mixture into a 13x9 baking dish.
Bake at 325 degrees F for 30 minutes. It will seem like it's not done, the middle will sort of jiggle. Remove and cool on the counter. Once it's cool enough to handle, cut them into bars, wrap them in tin foil and store in freezer or fridge.

Here's my favorite. I found it on a diabetic website when I was looking for something to bake for my grandpa, but we love them here too. So yummy and your kitchen will smell great!

- 1 1/3 c old-fashioned rolled oats
- 2/3 c raisins
- 1/2 c crisp rice cereal
- 1/3 c unsweetened shtredded coconut
- 3 T chocolate chips
- 2 T chopped pecans
- 1 t baking soda
- 1/4 c peanut butter (I use chunky)
- 2 T brown sugar
- 3 T margarine
- 3 T honey
- 1 t vanilla

Mix dry ingredients in a bowl. Microwave wet ingredients (except vanilla) for 20-30 seconds. Add vanilla to wet ingredients and stir. Pour over dry ingredients and stir well. Press into greased 8" square pan. Bake 15-20 minutes at 350*F until browned. Cool completely before cutting.

These are by far my FAVE homemade granola bars. In fact, I need to make up a couple batches for a camping trip! Yummy!! I even throw in some flax meal! My kids gobble these right up!!

2 cups rolled oats
3/4 cup packed brown sugar
1/2 cup wheat germ
3/4 teaspoon ground cinnamon
1 cup all-purpose flour
3/4 cup raisins (optional)
3/4 teaspoon salt
1/2 cup honey
1 egg, beaten
1/2 cup vegetable oil
2 teaspoons vanilla extract

1.Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13 inch baking pan.
2.In a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour, raisins and salt. Make a well in the center, and pour in the honey, egg, oil and vanilla. Mix well using your hands. Pat the mixture evenly into the prepared pan.
3.Bake for 30 to 35 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Do not allow the bars to cool completely before cutting, or they will be too hard to cut.
