Calling all vegetarians and vegans!

This is one of my all time fav vegan recipes--great with a green salad. Maybe not the most kid friendly depending on how picky your eaters are, but a definite adult pleaser. I've been a vegetarian for a decade my hubby is *almost* there.

We'll be having them tomorrow night. The beans didn't cook in time, and I have an extra 5 yr old here tonight, so I wasn't in the mood to do the extra work, or listen to hungry kids whine at me. LOL

I fed them Chicken Nuggets (all natural), but with it I gave them raw carrot slices, grapes and string cheese.... so still pretty healthy.

Let's see, I make whole wheat pasta with homemade sauce with a ton of veggies in it.
I make all kinds of salads. Taco, greek, veggie and pear & gorgonzola are a few that I love. I love homemade soup and grilled veggie sandwiches.
