We had chicken taco salad tonight.
Last night we had meatloaf (alton browns) and corn on the cob.
Two nights ago we had strip steak, homemade mashed potatoes (parsley, cheese, onion powder, milk, sour cream, and garlic salt), with italian bread.
Three nights ago we had grilled chicken sandwiches on italian bread with corn on the cob and homemade french fries (from a WW cookbook)

We do breakfast for dinner once a week! the kids love it...no veggies, although I sneak in fruit instead...

We did breakfast for dinner too If you do scrambled eggs,omlets,a quiche, or fritta you can sneak lots of veggies in. I always put pureed carrots in just because we always have carrots. You can't even tell they're in there

That sounds good! I am sitting here making a meal / grocery list and I added that I've been wanting to try something with eggplant, because I have only made a meal using it ONCE (eggplant parm) and it was not good.
