You can also go to allrecipes.com and click the ingredients tab at the top. You can input the items you have and it'll spit out recipes you can make with what you have.

You can rinse them and put them in salads, pasta, sauces, anything! You can blend them up with a little taco seasoning, spread on tortillas, top with cheese, roll up, and bake for an easy bean burrito. You can toss them into any type of soup or chili too!

My mom used to make a "Mexican casserole" aka "fridge dump" that everyone loved. She layered crumbled up tortilla chips or whole tortillas, leftover meat (chicken, steak, shredded pork, or ground beef), cheese, beans, sour cream, and salsa in a casserole dish and baked for 30 minutes on 350. If she had extra veggies she would saute them and layer them in with everything else. It was cheap, quick, and everyone loved it. Great way to use up those beans!!

Also, 3 bean chili and vegetable soup with beans both freeze well.

Peanut Butter Mousse

8 oz. soft cream cheese
2 cups powdered sugar

Beat cream cheese until fluffy. Add sugar and peanut butter and blend well.

Any ideas for soymilk? DS is breastfed and has a milk intolerance so wic gave me soy. unfortionately it wont work as milk in a lot of dishes like puddings etc

Hummus is great and kids love to dip crackers and veggies in it. My ds eats fistfuls of the stuff.
