What to do with peaches?

We got some of the best peaches i've ever tasted at the fruit market recently. They got their last shipment for the year in this weekend so I bought a peck of them. Now I need ideas for what all to do with my peaches before they go bad.

Do you have a good pie recipe?

I don't have a good pie recipe, but you could can them, slice them and freeze them for pie making later, make jam, make peach-applesauce (or some variation thereof), slice them thin and dehydrate them...

We just got 10 pounds of very ripe peaches off a friend's tree. I winged the pie and it turned out really soupy. I also made some really yummy peach butter (like apple butter) as well as a peach-cantaloupe conserve. The peach butter recipe came from the Ball canning book.

I don't have stuff to do canning and no money to buy it this fall. But i'll probably freeze them after I make a pie so they don't start going bad. Peach butter sounds yummy - i'll try to look for a recipe for that.

You can freeze them and use in breakfast smoothies. Try a banana and some milk and frozen peaches. They are really great and a quick breakfast food. You can have one with a whole wheat slice of toast.

We have fresh peaches here and I actually have a peach cobbler in the oven! I also slice them and freeze them and can them.

Whenever I make a peach pie I just wing it! Slice up the peaches, add brown sugar and dried tapioca. Yummy!!

Definitely a fan of freezing! They go yummy if you dice them and just stir them in with plain vanilla ice cream & much healthier than getting ice cream with a ton of other stuff in it. Or you can make smoothies. I'm on an ice cream kick lately, but it sounds good to back halved peaches and put a scoop of ice cream on top! :-P

Oh I would make peach glaze pie. I don't like to cook them they get ruined. I can't remember were I got the recipe but you make your own glaze. It is super yummy.
