"GOOD" healthy cake??
So I have decided that since the only place I can find around here that sells cake my DS can actually eat (he's on a no white sugar diet) charges $45 for a single layer round, I'm gonna attempt to make one for him. His b-day party is next Saturday (the 11th) so I kinda wanna make one and try it first before feeding something to guests that may end up tasting like cardboard. ANYWAYS, the point of this rambling is to ask for any ideas. He told me he wants cupcakes, which I know I can just substitute white flour for whole wheat or spelt, and white sugar with agave or evap. cane juice. But what about frosting??
And any other ideas for a healthy cake alternative would be much appreciated! TIA mamas!! ![]() Advertisement

My favorite is a white cupcake recipe from www.elanaspantry.com It uses coconut flour and agave nectar and is very moist and yummy! She also has a chocolate frosting recipe made with coconut oil and agave.

I just made the recipe called "crazy Cake" (also known as wacky cake), last night and it was so good. It is basically, a chocolate cake, but doesn't use dairy of eggs. I used maple syrup for a sweetener. We are allergic to dairy and eggs so this works well for us. The recipe is on allrecipes.com.
For a dairy free frosting, I wipped palm shortening, cocoa powder, and maple syrup together and put ona very well cooled cake. It was so delicious! And I topped it with fresh blackberries we picked earlier. |

Had my baby boy's party yesterday. Went with the chocolate cake with coconut cream frosting. YUMM-O! Only 1 complaint, but it was from a 5 year old, so that really doesn't count, right?? Next time I make the icing though, I think it needs more coconut flavor so I'll probably add some broiled fresh flaked coconut to it. Thanks again for the ideas mamas!
