Food for a sick friend

A woman in my mom's group is in the hospital and is having trouble finding foods she can eat. She is pregnant and undergoing chemo. She is vegan and is having trouble finding something to eat in the cafeteria.

I am planning to bring her something to eat. What are some good vegan recipes that I can make that are gentle?

I ate a lot of squash and mashed potatoes after I had stomach surgery and was having a hard time with food.

I just made rice in chicken stock for DH who had a bit of an upset belly. Obviously you couldn't use chicken stock, but it really flavored the rice. I'm thinking I will use it as a side dish in the future.
