Need soup recipes

I am looking for some good soup recipes. I am in the mood for something differant! I don't make much soup. Mainly chicken noodle.

Chicken and black bean

black beans

shred cheddar cheese on the top

Also you can add a twist on chilli by adding black beans and chili beans

We just made this one the other day... I love it because it is a thick soup.. We added Leeks also, AND we used homemade chicken broth instead of the chicken cubes and water!!!

Potato, Broccoli and Cheese Soup

2 cups chopped onion
2 tablespoons margarine
2 1/2 pounds peeled and cubed potatoes
5 cups boiling water

4 cubes chicken bouillon
3 cups fresh broccoli, cooked and
salt and pepper to taste
3 cups shredded Cheddar cheese
1. In a large stock pot saute onion in butter. Add potatoes, water and bouillon cubes. Cover, bring to boil and then reduce heat to medium and cook until potatoes are tender, about 15 minutes.
2. Remove tough outer skin of broccoli stems and cook broccoli. Once cooked add to soup.
3. In a blender or food processor puree half of the soup and return to stock pot. Season with salt and pepper.
4. Add cheese and heat soup through until cheese is melted. Serve warm.

Carrot/Pumpkin/Squash and Ginger Soup

Saute Onion, garlic and roughly chopped carrots. Cover with boiling water and add 1-2 boullion cubes (or stock instead of water/boullion) and some grated ginger. When the carrot is tender use a stick belnder to puree and check the seasoning. Check to see if there is enough Ginger and add more if needed.

You can also sub pumpkin or squash for the carrot and orange zest for the ginger if you like. If doing pumpkin or squash yoyu can add a couple of Tbs of red curry paste and some coconut milk to make a red curry squash/pumpkin soup. Mmmmmmm

This is one of our very faves. You can sub chard or spinach for the kale and onions for the leeks. I add some extra spice to it and serve it with cheddar/green chili corn bread. MMMMM!

Cream of broccoli

- 2 Tbsp of minced onions cooked in 2 Tbsp butter
- Add 1 can campbell's chicken broth (but keep a little bit on the side to mix the cornstarch into), (I INSIST on this brand, and I do not dilute)
- Add the same amount of half and half
- mix 2 Tbsp. of corn starch into small amount of chicken broth and add to pot
- add 2 cups of cooked broccoli florets
- bring to simmer stirring frequently, then removed from heat
* You can either throw half of the soup into the blender and pour back into the pot or you can just leave it as it is
- season with salt and pepper to taste
