Bread help, quick!

For the past several months I have been using this bread recipe. I really like it, but I want a 100% recipe, now. I was thinking about trying to tweak the above one, but I'm not sure how to do so. I have some wheat gluton flour, but I am not sure how much to use... Any ideas? Or good 100% whole wheat bread recipes? Really, really need bread ASAP and want to use this wheat gluton that my DH made me buy.

I use This recipe from king arthur I use molasas. and put a little less water than called for.

Here's mine:

1 2/3 C water
2 T butter(or coconut oil - I use either)
1/3 C sucanat(you can sub honey or whatever sweetener you like)
2 t salt
4 2/3 C whole wheat flour(for 1/3 of it I use vital wheat gluten)
3 T active dry yeast

It makes 2 loaves.

Are there any special steps? I am not a great "wing it" kind of baker... Cooking, yes, not so much with baking.

Not really, it's just like any other bread. It's easiest to use either a heavy duty mixer(Kitchen Aid works well) or bread machine for the kneading process, but you don't have to. Knead for about 10 minutes or so, cover and let rise, cut in half, shape into two loaves, cover and let rise a second time until doubled, and then bake at 350 until golden brown.

Farm Mama- turned out great the second time, first time I didn't add enough vital wheat gluton, I think, it didn't rise very much at all. My DH said he likes this recipe better then the other one I was using.

most bread recipe's will work to make 100%, I add 2T gluten per loaf, and often add 1/3 more yeast than it calls for. The bread works much better for 100% whole wheat if you grind your own hard white wheat flour, but if you don't have a mill, try to find flour made from hard white wheat -King Arthur makes one. It's still 100% whole wheat, but just a different variety - I think it is less heavy....
