HELP: Overcooked dry northern beans

I accidentally overcooked some dried northern beans I was making in the crockpot, and now they are too soft for their intended purpose (white chili). Any ideas on what to make with them? I was thinking I could mash them and do something with them, but I have no clue what to do with 1lb of mashed beans, with only two of us eating.

Perfect thread for a Texan to respond
Just drain whatever water is left and whip those beans up into a paste, freeze it in portions, if you've got alot. Here's what you can do with them:
  • Bean Burritos on flour tortillas, spread on the mashed beans and add taco meat & cheese
  • You can add dollops of the mashed beans to hamburger patties or meatloaf
  • Use it as a thickener in soups, stews, and gumbos.
  • Make Mexican/Taco Pizza - same concept as the burritos, just layer and bake on a pizza crust in the oven
  • Serve them as "refried beans"... just spice them up as you like.
  • Mixed with queso and salsa.. makes a pretty good chip dip
HTH!

Re: HELP: Overcooked dry northern beans

My dad used to grind up all his beans, add it to the chili, and made "beanless" chili (since none of us liked beans).
