Please teach me to make mexican rice!

I really need some help with my mexican rice! I've been trying out new recipes for over a year and I still can't get it right. Pitiful, I know! I'm looking for a good resturaunt style rice to be a staple side with all my southwest-style dishes. Something light and fluffy with a good flavor to it. Not super spicy, but flavorful. DH and I are both Arizona natives, so we know what good mexican rice tastes like and none of the recipes I've tried live up to our expectation. Can someone please help me? Pretty please?

Thanks! That sounds yummy. I haven't tried it with fresh tomato instead of tomato sauce. I also see this one has a cube of chicken bullion in addition to the broth. I don't have any of that, but I'll pick some up at the store because I can see how that could change the flavor. I'll be trying it in a couple days and let you know how it goes!

I'd still love to hear other suggestions just in case this one isn't the winner!

Dh is mexican and he approves! He is hard to please, but everyone seems to really love this one. I always use canned tomatoes, not fresh. They give a more consistent flavor from batch to batch and you don't have to pay an arm and leg for fresh (like we do around here!). You can adjust the heat with however many jalapenos you add. O and I also put the onion and jalapeno in the blender until smooth. We prefer the flavor be all over the rice and to not bite into a piece of onion or jalapeno.
I'll give that one a try too. I like the idea of blending the onion and jalapeno first. Great idea!

Mine is SUPER Simple
2 Cups Long grain White Rice
4 Cups water
1 Cube of Tomatoe and chicken Bullion (found in the mexican isle)
1 med onion Minced
3 Cloves garlic Minced (I use my microplane and grate them)
1 Jalapeno Finely Minced and De-seeded and Ribs Removed
1Tomato No seeds Diced
***********************************************
1.Start out by using a large Saute Pan (Mine is 13 inch) with Tight Fitting Lid
Turn to Med High heat Add 2 Tblspoon oil and add your Onion garlic and Jalapeno Saute until Fragrant and Onions become slightly tender .

2.Then add your Rice and continue to saute for a few minutes on Low heat You want your Rice to become Coated with the oil and start to turn a Pearly white. this will prevent it from turning into a Sticky Mess and keep the Rice kernels separated.

3. Add your 4 cups of water Tomato and Bullion, Turn the heat to High Let it come to a Boil and then Drop the heat to Low, Cover and Let simmer for 20 Minutes. Don't keep messing with it and stiring every few minutes thats how you get Sticky risoto rice and Not fluffy rice.

4. after 20 Mins check the Tenderness of your rice If there is a Lot of liquid left let the lid off for a bit to let it evaporate out, If Not leave it covered if its Firm but cooked Cut the heat. leave covered till ready to serve....

Works Every single time for our family.

I am Mexican and this is pretty much how I make it. Except I use tomato buillion (knorrs).
