Pumpkin bread/muffins- recipe please

Anyone have a killer recipe? I prefer not to use oil and like butter instead, but will sub applesauce for the oil if need be. Thanks!

I found a recipe online last fall, but have tweaked it so much to make it healthier and fit our liking, that it's pretty much a new recipe now. It makes a delicious quick bread in a bread pan, muffins, and we've even made it as a cake in circular pans, then covered with cream cheese frosting. Every time I make it to bring some where I get compliments, and have learned to bring the recipe with me.
Pumpkin Bread
Ingredients:

  • 3 1/2 cups all purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons salt
  • 1teaspoon baking powder
  • 1 Tablespoon pumpkin pie spice (or 1 tsp each of nutmeg and allspice, 1/2 tsp ground clove)
  • 1 teaspoon cinnamon
  • 2 cups sugar
  • 1/2 cup softened butter
  • 4 eggs, beaten
  • 3 cups pumpkin puree

Directions:
Preheat oven to 350 degrees F (175 degrees C). Grease two loaf pans/24 muffin cups/two 9-inch round cake pans. In a medium mixing bowl, combine flour, baking soda, salt, baking powder, pumpkin pie spice (or nutmeg, allspice, and cloves) and cinnamon. In a large bowl with an electric mixer, blend sugar, butter and eggs. Stir in pumpkin. Slowly blend the flour mixture into pumpkin mixture. Pour the batter into prepared pans. Bake in a preheated 350 degrees F (175 degrees C) oven for 90 minutes(20 minutes for muffins, 60 minutes for cakes). Let cool for 10 minutes before removing from the pans.

Also works with canned.

Ingredients
1 small sugar pumpkin, seeded
2 cups whole wheat flour
1 cup old fashioned oats
2 cups white sugar
2 teaspoons baking soda
1/2 teaspoon baking powder
1 teaspoon ground cloves
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1 teaspoon salt
2/3 cup applesauce
3 eggs

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Grease 24 muffin cups or line with paper muffin liners.
2. Split pumpkin in half. Remove seeds and strings. Place on baking sheet, cut side down. Cover with foil and bake in preheated oven until tender, about 90 minutes. Remove pumpkin pulp and puree in blender. Measure out 2 cups pumpkin puree; set aside.
3. In a large bowl, stir together flour, oats, sugar, baking soda, baking powder, cloves, cinnamon, nutmeg, allspice and salt. In a separate bowl, beat together 2 cups pumpkin puree, applesauce and eggs. Stir pumpkin mixture into flour mixture until smooth. Scoop batter into prepared muffin cups.
4. Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.
