Dairy and gluten free first birthday cake ideas?

...that still taste yummy? Title says it all. I just need some last minute ideas.

Check this site, Elana's Pantry. It's gluten free, can't remember if it's dairy free too, I think a lot of her recipes are, not sure if all are. Lots of cupcakes, maybe make a cupcake tower?

I was going to recommend Elana's Pantry as well. If you have access to coconut flour the vanilla cupcakes are *delicious*!

We did cupcakes out of this:

I made "giant" cupcakes for DS & regular cupcakes w/ the rest of the mix.

I frosted the cupcakes with this:

I personally didn't like either product. BUT, my 1 year old son who'd never had sugar LOVED them both. The other kids at the party also ate them w/ no concerns!

For the adults I made a nicely decorated "regular" cake. Pics are on my FB if you want to see just friend me w/ a note that you're from DS.

DS is/was dairy, gluten, soy sensitive. Also, I bought the frosting & cake mix at a local kroger store!

I use Betty Crocker's Gluten Free Cake mix (Devils food tastes just like a gluten version) and their Whipped Vanilla frosting. It does say that the frosting is manufactured in a plant that uses dairy and may contain traces, but I've never reacted to it. I'm gluten and dairy free.

Ok....my DS was dairy and gluten free for his 2nd birthday. I made a Glutino chocolate cake mix, then frosted it with this: http://www.cherrybrookkitchen.com/pr...illaspread.php

For the frosting my DS wanted chocolate frosting, so I took this frosting tub and microwaved it for a few seconds, then put a melted milk chocolate candy bar into it and stirred it in really well. Add 2 candy bars for more chocolate flavor. My DS just loved it. The frosting is almost caramel type and the cake was so tasty.

We made an applesauce cake. It's already dairy free, just sub gluten-free flour mix (like Bob's Red mill) & a bit of xantham gum for the flours. You can really do any dairy-free cake as gluten free. Another one you might try is one I make all the time and it's fluffy and fabulous:


2 c. gluten-free flour substitute
1/2tsp xantham gum
1 tsp gf baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp fine sea salt
2/3 cup water
1/3 cup pure olive oil
1 cup pure maple syrup or honey
2 teaspoons cider vinegar
1 tablespoon vanilla extract

put all dry ingredients into a large mixing bowl and whisk together. Put all wet ingredients into separate mixing bowl and whisk together. Add the wet mixture to the dry mixture and stir just until combined, do not to overmix. Pour into sprayed or parchment-lined pan and bake at 350 til done. If you wanted you could sub applesauce for the oil and then if would be fat-free. Don't think it would be as fluffy though.
