Using up eggplants and grapefruits
Around here, eggplants and grapefruits are on sale for very cheap.
I bought lots! Now I don't know what to do with them! I know of no recipes with grapefruit, aside for grapefruit marmalade and baked grapefruit... and eggplant I know ratatouille, eggplant parmesian, roasted eggplant spread, and stir fry. I'm looking for other ideas, because that's pretty much what we've been eating straight for the past month or more... Any ideas of what to make with grapefruits and eggplants? I'd prefer the eggplant to be without tomato sauce, because I need a change.

for the eggplant you can make baba ganoush. i love it and my kids do too.

how about using the eggplant as the crust to a pizza?
As for the grapefruit sliced in half and sprinkled with sugar or honey eaten for a breakfast. There is a reason I don't buy a box of them when the FFA kids come around selling them. |

I remember getting an email a while back with a recipe for a salad with grapefruit... i just searched and this site came up there are a few that look good...

Eggplant patties
Bake whole eggplant at 350 degrees until soft. Let it cool. Scoop out eggplant and drain it. When drained mash it, add italian seasoning, egg, dehydrated onion and flour (i make it to a very thick consistency) Sautee in pan with oil You can top it with tomato sauce and cheese for a quick parmesan, put it on a bun as a "burger" or my favorite it to serve with sour cream like potato pancakes. They freeze really well after they are made. |
