I have to share this, it's so yummy

Enchilada

1lb ground turkey, chicken or beef (I use turkey, less fat)
1c shredded carrot
1 can fat free refritos
1-1 1/2c cooked rice
1c low fat shredded cheese, divided-I like mild cheddar for this recipe
12 flour tortillas
1 can enchilada sauce or salsa
salt and chili pepper to taste
Optional-sour cream, greek yogurt and/or guacamole

In skillet brown meat until half way cooked, add your seasonings here. Add shredded carrot, finish browning meat. Drain fat, set meat on plate lined w/ paper towels to get any extra fat. In large bowl combine meat mixture, refritos, rice and 1/2c cheese. Spray baking sheet w/ non-stick cooking spray. Put mixture in center of flour tortilla, roll closed and place in baking sheet so it won't unroll (flaps down as my dad says). Pour enchilada sauce or salsa over top when baking sheet is full. Bake 350 for 20-30 minutes, adding remaining cheese for last 5-10mins. or until lightly brown. Serve with sour cream (or greek yogurt for less fat) and guacamole if desired.

I love this recipe. Even my hubby says it's as good as his mothers and she's 1st generation Mexican American. It's a great freezer meal if you don't add the enchilada sauce until right before baking. I imagine it would also taste good if you sautéed onions and/or chili peppers, then added that to the meat. However I can't eat either so you'll have to tell me if you try it. Oh and don't tell hubby I've been using ground turkey, he hasn't figured that part out yet.

Sounds yummy! will have to try it, for sure- will swap out rice or corn tortillas, for us (gluten free) thanksfor the dinner idea!

This recipe is gluten and casein free. I haven't tried it myself, but stumbled on it while looking for homemade tortilla recipes. Honestly, I'm not sure why I saved it, but now I'm glad I did. The reviews are really good.
