Need EASY slow cooker recipes!

DH and I are both FT graduate students, so when we get home in the evening I don't like to spend a bunch of time preparing dinner. I'd prefer to spend it with DD! Plus, she just plain ol' doesn't like me taking that time away from her to be in the kitchen, and she isn't interested in helping me yet either, lol!

So, I've been trying to use my slow cooker more, but I just have a hard time finding *easy* recipes. I find lots and lots of recipes, but they always have two pages of ingredients, or require cooking a few things before they go in the crock pot, or adding things throughout the day, etc...

I need recipes where I can just dump everything in in the morning and it's ready when we get home!

Any recipes? We like pot roast with potatoes and carrots, and it's nice and easy, but I'd like other things too!

I made this one this morning... (This is how I remember it went, it was 7am, afterall. )

2-4 chicken breasts, cubed
1 can of diced tomatoes with juice
1 can of olives, drained
1 can/jar/frozen box of artichoke hearts, drained
1 C chopped onion (you can buy this frozen)
1T curry
salt and pepper to taste
3/4 t thyme
1 can chicken broth

Dump, cook on low for 8 hours. I don't know if it's good as this is the first time I made it, but it sounded ok. I will serve it with rice and plain yogurt.

I have found good recipes in the Once A Month Cookiing cookbook and others of that style. A lot of the recipes are dump and either crock pot or put in the oven. You'll have to add vegetables, tho.

Simple Chicken...

We use 4 boneless chicken breasts (frozen or thawed)
1/2 c. water on the bottom of the crock pot
1 package of Good Seasoning Dressing (just the package dry mix) sprinkled over the chicken.

Since every crock pot is different... we cook ours on Low for 4-4 1/2 hours. SO yummy!

Similar recipe... Lemon Chicken

4 chicken breasts (frozen or thawed)
1 whole lemon
1 Tbsp Lemon Pepper

Place chicken breasts in the crock pot.
Squeeze entire contents of the lemon over the chicken breasts
Sprinkle the TBSP of Lemon Pepper over the chicken

Cook on Low 4-5 hours (using frozen chicken breasts - that's what we do but our Crock Pot cooks very high)

Cracker Barrel Chicken Tenderloins

You can use frozen chicken breasts or tenderloins. My CP cooks very high, so even frozen breasts cook throughout in 3-4 hours!

2-4 Chicken breasts (or 6-8 Chicken Tenderloins)
4 tsp lime (or lemon) juice
4 tsp honey
3 cups Zesty Italian

I never thought this would taste good but it's awesome and I'm picky! Put your chicken in the crockpot, mix the lime (or lemon), honey, and italian and pour over the chicken and you're done! Cook on low for 8 hours or (in my pot) high for 3-4 hours. Jus tuntil the chicken is done.

I ALWAYS add lots more lime and honey! I think I do at least 3 TBSP of each. You can add/subtract based on your tastes! You can also make this in the skillet. Make it the same way but use thawed chicken breasts. Mix together in a ziploc bag, marinate for 2 hours, then pour it all in teh skillet to cook.

Pot Roast
-however much pork loin will fit in your pot (frozen or thawed, adjust temp and hours)
-1 can baby potatoes (or sliced)
-1 can sliced carrots
-2 cans cream of mushroom soup
-1 1/2 cup water
-1 packet onion soup mix

This is my dh's fave! Mix together and put in pot, cook on low 8 hours or high 4 hours(only if thawed or a small cut of meat).

My DH is a swim coach and works late, so I like to have easy things to cook too!

Italian Chicken
Spray crockpot
Layer in some boneless skinless chicken breasts
1 jar of your favorite pasta sauce
Crockpot on Low
When you get home, stir in a spoonful of cornstarch to thicken the sauce back up, and take the chicken out to rest 5 min, slice it up, and return it to the pot.
Serve over pasta with parmesan.

Best Ever French Dip
Top Sirloin
1 can Campbell's French Onion Soup
1 can Beef broth
1 bottle/can beer
Crockpot on low
When you get home, pull out the meat to rest 5 minutes, trim fat and slice. Return to pot while you prep the rolls...
Serve on toasted hoagie rolls with sour cream, melted sliced provolone, and the cooking liquid becomes your au jus.

Chicken and Stuffing
Spray pot
Layer boneless skinless chicken breasts
6 slices swiss cheese
1 can cream of mushroom soup and 1/2 cup milk
2 cups stuffing mix
1/4 cup melted butter
Crockpot on low

There's a blog/website, something like 365 days of crock pot cooking. Try googling that and see what she has. Also try cooks.com or allrecipes.com for ideas.

I can relate to needing quick meals or crockpot meals!

This is one of my all time favorite!

4-6 pork chops (bone-in or deboned)
1 can golden mushroom soup (cream of golden mushroom-something like that)
1 med. onion-sliced
1 granny smith apple-sliced and cored (slice thin)

Drop the chops in the bottom, pour everything else on top. 6-8 hrs. low

Somes we put it over rice, egg noodles; it was delicious with homemade mashed potatoes too!

I fould find a few great blogs with crock pot meals. I have used several recipes off of the www . crockpot365 .blogspot .com site.
