My all time favorite dinner just happens to be an easy slow cooker meal!
Swiss Chicken
(you don't have to be a fan of swiss cheese! I only like it in this! Kids love this too! You will be surprised!)
Spray pot with Pam.
Put about 4 boneless skinless chicken breasts in the bottom (as much as you have or as much as you want)
Top with 1 lb. of swiss cheese(I've used pre sliced, but usually get a block and cut thick slices)
Mix 1 can of cream of chicken soup with 1/2 can milk.
Pour soup over chicken and cheese.
Pour a box of savory herb stuffing mix over that and drizzle 1/4 cup melted butter over the stuffing.
Done!
Cook 4-6 hours(mine cooks everything a little faster so I do 3 hours)

I hope I didn't make it sound more complicated than it is! I think I do it a little different every time, but it's always good! So just throw it together and don't stress the small stuff.

P.S. If you ever freeze leftovers of anything you can thaw/cook them in the slow cooker with a cup of water. I do this with spaghetti sauce and meatballs, chicken curry, etc.
P.P.S. I often just throw fryer breasts or whole chickens or roasts in with a cup of water, sprinkle garlic and random seasonings on it and let it cook at least a few hours until the temperature is good, but usually longer and I've never over cooked anything. Anywhere from 3 to 6 hours will be good for just about anything. Also, throw in chunks of potatoes, carrots, onions, or whatever you have to cook with the meat. Oh and use leftovers and drippings for soup!

I'm looking for a good roast recipe that does not call for cream of X soup. DH is not a fan of cream of X anything but I do manage to sneak it in things once in a while... I saw the other one but he is not a liker of soy sauce either.

I make a flavored "gravy" with roux. so a white sauce
we're not fans of cream soups either

I didn't see salsa chicken up... Its super yummy and easy... I'm not sure if there's an acutal recipe, but here's what I do

Throw 3-4chicken breasts in the bottom of the crock pot, dump a jar of your favorite salsa on top, cook on high for 5ish hours and then shred the chicken.
Sometimes I'll add beans and/or corn also (at the beginning)
Serve in tacos, burritos, enchiladas (when you have time to bake them), nachos...

Southwest Chicken and white bean soup (I make it in the crock pot)
Ingredients
2 cups shredded cooked chicken breast
1 tablespoon 40%-less-sodium taco seasoning (such as Old El Paso)
Cooking spray
2 (14-ounce) cans fat-free, less-sodium chicken broth
1 (16-ounce) can cannellini beans or other white beans, rinsed and drained
1/2 cup green salsa
Light sour cream (optional)
Chopped fresh cilantro (optional)
Preparation
1. Combine chicken and taco seasoning; toss well to coat. Heat a large saucepan over medium-high heat. Coat pan with cooking spray. Add chicken; sauté 2 minutes or until chicken is lightly browned. Add broth, scraping pan to loosen browned bits.

2. Place beans in a small bowl; mash until only a few whole beans remain. Add beans and salsa to pan, stirring well. Bring to a boil. Reduce heat; simmer 10 minutes or until slightly thick. Serve with sour cream and cilantro, if desired

To make it in the crock pot i just throw 2 frozen chicken breasts in the pot and then everything else (except sour cream and cilantro) I also add corn, onion, fresh green chilis. I dont buy taco seasoning so i just use a little salt, pepper, cumin, chili powder, and garlic.

This is my salsa chicken recipe. I actually found it on another board and tried it and it was fabulous. Of course, most of the flavor comes from the salsa, so the kind you pick will have a big influence on how it comes out:

2 pounds chicken, frozen (yay, no planning ahead to thaw out meat!)
1 can black beans, drained
1 can corn, drained
1 jar salsa
1 8-ounce package of cream cheese

Put frozen chicken breasts in crockpot. Put in drained black beans and corn. Pour salsa all over. Put crockpot on high about 4-5 hours. Then add one package of cream cheese on top. (I cut it into cubes and spread the across the top.) Cook for another 1/2 hour or so. (I cook for 30 minutes and then turn crockpot off and let sit for another 15-20 to makes sure cream cheese really softens good!)

I put carrots and potatoes in the bottom, set the roast on top and then make a packet of brown gravy and pour over the top. I cook mine all day on low. I dont mind cream soups but I dont like it on my roast.

Super-Easy Vegetable Beef Soup

2 cans mixed vegetables
1 can beef
2 cans beef broth
1-2 cans diced tomatoes
Dried minced onions (to taste)
Combine everything in the slow cooker & cook on high for 4 hours or on low for 6-10 hours.

Smoked Sausage & Bean Soup

2 small cans Campbells Condensed Bean & Bacon soup & equal parts water
1 package smoked sausage, cut in bite-sized pieces
Carrots, peeled & chopped
Celery, chopped
Potatoes, peeled & chopped
1 small or medium onion, chopped

Combine in slow cooker & cook on high 4 hours or low for 8 hours.
Delicious!!!
