Sounds delicious. I don't think there's a law that says you need to have a green veg at every single meal. I prefer to look at the entire day's food rather than nitpick each meal individually – something I learned when my kids were dabbling with solid foods.

I would say so, but I'd also serve a veggie. I'm kind of a stickler about veggies

I'd say yes, that's what we had every Sunday after church for lunch growing up!

I'd add a side to this, a veggie or fruit or side salad.

Do you add anything to the beans? I make them too and cut up onions and add cilantro and some tomato dices with salt.

We would add some chopped greens or spinach to that and call it a great meal.

Yep. As others have eluded...if you're in the south it's practically a weekly meal. For real. Pinto beans are so versatile. I make them "southern" I guess--throw them in the crock pot over night (off), then in the mornign turn it on low for 8 hours. I add a little bit of bacon grease for flavor if I don't have some cubed ham to throw in. Pepper. Salt at the END. and I ALWAYS make my cornbread in a cast iron skillet. From scratch. It's like heaven.

We used to eat a version of that quite often as kids. Pinto beans and ham cooked in the pressure cooker with corn bread on the side.
