Kaleidoscopeeyes, We LOVE fried potatoes here! Soo good! Do you make them? How do you do yours? I am always looking for ways to change ours up. We have a 50 lb bag of red potatoes so lots of potato meals and sides in our future.

If that aint a meal, i dont know what is! my grandma fixed beans nearly every day when i was growing up. she would start them by 9 in the morning, and they would be ready for dinner, when the farm crew would start coming in.

I cant believe nobody has mentioned hocks yet. we love ham hocks cooked in our beans. its the very end portion of the shank on a ham. they're kind of hard to find in a grocery store sometimes, but since we butcher our own livestock, we've got plenty. dh doesnt like brown beans and its a real downer for me b/c theres really no point in me making them if he's not going to help me eat them. sometimes we invite friends over for beans/cornbread anyway, and he fixes himself a sandwich.

hambeans (yes, its all one word around here), cornbread, fried taters, a glass of cold milk and a piece of chocolate cake. it doesnt really get much better than that.

I've made hambeans before...but I normally have a few small hamsteaks in the freezer that I just cube up. If I'm making "fancy" beans (hambeans) it's for company because I never remember to buy hamhocks at the store! They're totally worth experimenting with!

Heck YEAH!! Sounds yummy to me...but I am a southern girl And fried potatoes

Hamhocks are really good too, they just get pricey around here and no wild hog yet.

O-and I love to add vinegar to my bowl of beans

It's a meal here. If I do make a veggie with it, I open up a can of spinach. I make this as a cheap and easy meal. Soak them over night, then in the morning throw the beans, a ham hock, onions, and some seasonings in the crock pot. Cook some jiffy cornbread up around dinner time and we're set. Actually hubby and I will be out from 6am-4pm at a flea market type thing, I may throw the beans in the crock so we have a hot dinner when we get home.

I would say so. We eat that minus the cornbread but plus ham Have with cornbread I just have been lazy to make it.
