How to keep potatoes?

I was given a large box of red potatoes that are somewhat freshly dug, but not as new as I would like. Other than giving them away to friends, does anyone have any suggestions on how to use them up? My experience is that mashed potatoes don't freeze very well, but does anyone have any other opionions?

Freeze them! It's totally possible. We just ate 6 month old potatoes for lunch today. HERE's how.

we have a root cellar in our basement. I store 50 lbs at a time down there in a plastic tote box, uncovered. Occasionally I have a couple go bad but that's it. Right now I have 50 lbs of red potatoes and 10 lbs of regular potatoes down there.

I bring up a basket of them at a time and store them in the veggie drawer. I don't think you are supposed to store potatoes in the fridge because below a certain temp (I want to say 45 degrees but I am not sure on that) the starches start to change and it can affect the taste and/or texture of the potato. I haven't had any problems with it though. I don't keep them in there very long either. Couple weeks max. I just do it so they are more easily accessible than running to the basement everytime I need a few potatoes.

refrigerating helps a lot. I was going to suggest grating them like hash browns to freeze them (also mentioned in the link above).

mine keep in our pantry for more than a couple weeks. I am sure to only store those that haven't already started to go bad. It's colder and dark in there.

my pet peeve with my grocery store is that they have all the potatoes under really bright lights, it makes them all go green! I have to dig right to the bottom of the pile to find the non-green potatoes but if I'm paying $5 for a bag of potatoes they better be tasty darn it!

Thanks for all the suggestions. I didn't think you were supposed to refrigerate them either. We don't have a basement, and I have a tiny pantry, so my storage options are limited. I will try the recommendation to freeze some, and pass the rest on to friends!

Cold (the fridge) turns the starch into sugar, and they don't behave like they should, and taste too sweet.

I have always put mine in a box with shredded newspaper. Like, bed of newspaper, scatter potatoes, layer of shredded paper, potatoes, repeat then lid on box. I dig potatoes in late Aug, early september, and use the bits to plant in the spring
