Keep them in the cold (not freezer cold) in the dark. too much light makes them go green. My grandmother in law used to have a 50lb sack in the basement and they lasted all winter.

We eat mashed potatoes like they're going outta style... I always buy them in bulk, clean and cube them, blanch them, flash freeze 'em, them put them in baggies to the deep freezer. When i need them i just take 'em out and nuke 'em in my steamer with some garlic and mash the heck outta them.

They always taste fine... just make sure you blanch them cause if not they defrost weird.

You can make your own root type cellar. Just dig a whole in the ground, in a cool area and cover with a board.

Keepin' an apple with the potatoes will keep them from sproutin'

Like the OP, I am in a basement level apartment I do not have a cellar or many storage options. My choices are the hall or kitchen, and hall has the dryer so getds quiet warm-. I was wondering about keeping a plastic tub with a cover under the table in the kitchen, would that help any?

I wouldn't use plastic, they don't breath, a cardboard box works well. Just find the coldest darkest place in your house (that isn't the fridge) and put them there! When I lived in an apartment I kept them in the linen closet on the bottom next to the tile floor.
