I despirately need lunch ideas!!

So! Ever since my 8th month of pregnancy to now (5wks pp), Ive had no cooking creativity!
I need some decently easy lunch ideas, something that can be cooked in 30min or less, edible for a 2yr old as well.

We are getting tired of peanut butter sandwiches, and turkey cheese sandwiches, And I hate making her macncheese... I just feel bad about it! lol

Grilled Cheese, pasta with tomato sauce, steamed veggies, chicken nuggets, soup.

Alot of times I'll just make extra dinner and then the following day everyone will eat that for leftovers

I keep a bag of boneless, skinless chicken breasts in the freezer at all times. At night, I put three breasts in a ziploc with one of the following:
-Italian Dressing
-Ceasar Dressing
-Teriyaki Sauce
-Honeyed Vinegar
-Seeded Mustard
-Buttermilk
The next day, I throw the marinated breasts in a pan and grill them while toasting some Sandwich Thins, Bagel Thins, or bread. Put the two together for a tasty sandwich. I usually garnish with a complementary flavor - like pickled ginger and wasabi mayonnaise for teriyaki, or chutney for honeyed vinegar.

Another useful trick is to make twice as much roasted chicken as you plan to eat for dinner (for us, that just means a whole chicken, a larger family might want two chickens). Reserve the thighs, wings, and back meat and throw them in a pot with tomato sauce and italian herbs the next morning. Simmer till lunch for a tasty cacciatore-esque sauce.

I throw just about anything into a quesadilla style lunch. My dd calls them flat tacos, lol I will do a taco style with leftover taco meat and cheese or shredded chicken with cheese, beans with cheese and or any veggies, pizza/tomato sauce with mozzarella cheese like a pizza. Just put what ever you have on had between 2 tortillas heat through in a skillet.

"snack platter"...variety of cheeses, crackers or pretzels, cut up fruit and veggies, hard boiled egg, whatever else sounds good. I set it up like a mini buffet for all of us to share.

tuna sandwiches
egg sandwiches
oatmeal
leftovers from dinner

make terriyaki bowls ahead and freeze them. They reheat very well. I make my rice and chicken as usual cool and throw in frozen broccoli and carrots and a squirt of sauce. The veggies steam perfectly when you cook it.

Enchiladas are fantastic left overs, and work well after being defrosted.

Lasagna fairly easy to make from scratch.

Fish.

Biscuits and gravy both freeze well and are great in the morning.

I make gluten free pizza on Sunday night, and then send the left overs with ods to school every day. You can do the same thing with the Jiffy pizza mix.

I love to make chicken salad. I boil chicken breasts until they're falling apart (or cook them overnight in the crockpot with 2 cups of water) and add miracle whip to desired texture. Then I put in sliced grapes, apples, and pecans. You can also add celery if you like.
