Need Easy Dinner or Crock Pot Recipes!!

I'm sorry if someone has asked this before, I just started reading the In the Kitchen forum, since I'm a newbie to cooking!!

Hubby and I snack ALL the time.. and I'm lazy when it comes to cooking. Sure, I would love to dabble.. but our kitchen is WAY too small (barely have room to get the bread maker out) and I just don't have the time. I watch little ones during the day, so I have a few minutes in the morning, and can spare some time in the afternoon, but that's about it!

And hubby LOVES coming home to dinner. Since we haven't had a family dinner in.. oh.. 2 years I desperately want to start again. Our son doesn't even know that when it's dinner time we should all sit at the table and eat together. Our kitchen table has been used for sorting, sewing, crafts, folding laundry.. everything but actually eating a meal together!!

I love the crock pot. Hubby loves chicken, so our favorite thing so far has been to put a few chicken breasts in there with cream of chicken soup and veggies, and it's all done by dinner time. But we can't eat that every day. I do need to find a subsitution to the cream of chicken soup. It can get expensive when I'm using a whole can for each meal, and it makes it seem more fatty then if I could use chicken broth and something else to make it more moisty then watery.

Anyways.. I need recipes!! I desperately want to save our dinner routine, but I just can't spend an hour in the kitchen preparing and constantly checking on a meal. I can do the crock pot, put something in the oven for a while.. things like that. So any recipes that you have would be great! Some of our favorite things are potatoes, carrots (any veggies, really), chicken, beef. We pretty much are open to trying anything. I do need a good meatloaf recipe, too!! The only thing that hubby does NOT like is onions. I love them for flavor, but he can not stand the texture, smell or taste.

salsa chicken! just put a few chicken breasts (i usually do like 4 large and have LOTS of leftovers and DH eats quite a bit) then cover it with a jar or so of your favorite salsa cook on low all day and shred with forks... i usually try to shread it a little while before serving... i just feel like the salsa flavor mixes in better. Its so yummy. You can add beans or corn or whatever also. Sometimes i serve it with rice, sometimes i mix some rice in the crockpot and cook it in with it (usually add cheese too), more often i use it for tacos/burritos. Oh i usually add a little salt, pepper, cumin, chili powder and diced onion. Use leftovers to make soup, casserole,so many options.

we make chili, roast, veggie beef soup, lasagna, i can't even think of all the things. One of my favorites though is the salsa chicken

I do the salsa chicken too. You an use different types of meat, different salsas, add other veggies. You can make so many variations that it doesn't have to always feel like the same thing.

Roast in the crock pot is real easy. Potatoes, carrots and onion then roast. 8-10 hours on low. For more flavor I coat the meat with onion soup mix.

Cream of Something Soup

Ingredients:

2 cloves garlic, minced
1/2 small onion, diced
1/2 cup main ingredient, diced
1/4 cup butter or substitute
1/4 cup flour or substitute
1 cup milk or substitute
3/4 cup broth

Cream of Something Soup Base Table

Cream of Something Main Ingredient Table
Directions:

Saute garlic, onion and main ingredient (mushrooms, chicken, celery, etc.) and set aside. Melt butter over medium heat. Whisk in flour. Cook for about 2 minutes. Add “milk” and broth. Add sauteed garlic, onion and main ingredient. Bring to a boil, reduce heat and simmer, stirring regularly, until it reaches desired consistency (about 10-15 minutes). Season to taste with salt and pepper and use as you would a can of condensed Cream of Something Soup in any recipe. If I make it ahead of time, I pour the soup into a pint canning jar and refrigerate it for up to four days.
Freezing Directions:

You can freeze these in batches in pint or quart size bags or use as you would a can of condensed Cream of Something Soup in any recipe and freeze that dish. A great way to keep “cans” at-the-ready for your CrockPot recipes is to make a quadruple batch and bag each “can” serving in a pint-sized freezer bag. Place those bags in a gallon freezer bag, label and freeze. When you need a “can” of condensed soup, pull out a bag, thaw, and drop it in your crock! Another great option is to freeze in Ziploc Small Sized Containers - which are the perfect size as well.
Servings: 1 “can,” about 1.5 cups
