If you go to any European market they have packets of Borscht that you add water to and voila!!! They cost like99 cents, and are delicious!!

I don't know if there are any EASY recipes, it is pretty simple to make, the part that kills me though is all of the chopping....which seems to take forever.......and I don't know of a shortcut for that!

I'd be interested in those recipes as well. My Babcia taught me this one as she called it her "poor mans' soup":

boil eggs
boil some potatoes to make mashed potatoes
boil keilbasa in water then remove the keilbasa.
use the water and add a small bit of flour or cornstarch, enough to thicken it up
add a splash of vinegar, salt and pepper to the soupy water
cut up the keilbasa and eggs into bite size pieces
mash up the potatoes and place into bowls
pour borsht over the potatoes and serve.

my father would put tobasco in his to spice it up. Does that look to be similiar to the recipe? I'd love to have more recipes to make this!!! It's such an awesome soup, espeically on cold days.
