With the artisan bread it doesn't really rise for that 30 minuted prior to baking. It really justs rests. It will usually flatten out a bit. Don't let that worry you. It rises while it is cooking. i have found this bread very hard to mess up. There is a specific recipe to use when using the wheat flour. I think it uses a little less flour but I can't remember for sure.

i did use a recipe specific for whole wheat flour, i haven't done the "original" recipe yet at all. and it didn't rise at all in the oven i'm going to try the original recipe this weekend and see if i can't get that to work too. i'm so beyond disappointed that i keep screwing it up, it seems so easy!

Good luck. Try the original recipe in artisan in 5 mins, get your oven really hot and remember the steam.
But yeah, I suspect something's up with your oven if you're getting a burnt top but uncooked bottom, maybe an element is out?

i live in houston, so i don't think that's it.

and you know what the more i think about it, the more i suspect my oven as being the culprit. i know that this oven sucks. it's somewhat unlikely that i will ever get the apt office to agree to fix it, because it works, but the heating is just....off.....somehow, i've always noticed it with other things too. i think going into this i didn't realize how important the oven heating was to this particular recipe. ah well, we're moving soon, maybe if the original recipe doesn't work this weekend then i'll just have to try and put it off until we get somewhere with a halfway decent oven.
