breadmaker for 100% whole wheat?

I am consideringmaking our bread myself, but I have to have 100% whole wheat and honey ONLY. My old bmaker wouldn't do it... At this point it doesn't matter how expensive the machine is. I am buying a cheap organic bread but it has tons of sugar. I was buying ezekiel bread 6 loaves for 19$, but it's kinda dry.

Any thoughts???

Re: breadmaker for 100% whole wheat?

I have only ever made whole wheat with honey (I grind grain myself) and both breadmakers I have handle it just fine. One is a Breadman, and one is an old suzanne somers breadmaker (when she had all those food combining cookbooks out).

ETA: I make bread daily, and they are both going strong

Re: breadmaker for 100% whole wheat?

I was looking at whole wheat bread flour, and the site I was on said to just run it on the whole grain cycle-so I'd look for a machine that has that option.

I tried 100% whole wheat in my bread maker, it came out like a brick So I ended up having to make it 50% whole wheat pastry flour and 50% unbleached flour and it comes out great.

Re: breadmaker for 100% whole wheat?

Unfortunately my tries at 100% whole wheat, both in breadmaker and oven, have often been awful as well. I think the key is a very, very long kneading and a very, very long rise. I don't have a breadmaker that really accommodates that, but there might be one out there. Another problem with breadmakers is that the instant breadmaker yeast is no good for whole grains.

Also, make sure you are using the highest protein hard wheat flour you can find (no pastry flour) and add a couple of tablespoons of vital wheat gluten for tenderness.

Try the Heathly Bread in Five Minutes a Day recipe. You can find it free at red star yeast and lots of hints and tips on the authors' blog. Its a very easy recipe and you keep the bread in the fridge and break off a piece daily and bake a loaf of bread, when its gone you just mix up a new batch and keep going. There's no kneading involved.

Re: breadmaker for 100% whole wheat?

How do you slice your homemade whole wheat bread? I've tried a few times, and it is just so crumbly. I either have to slice it in huge pieces (which is way to big for a sandwich) or if I slice it thinner I end up wasting half the loaf because it turns to crumbs.
