What is White Whole Wheat flour?

My hubby went to the store for me. (He goes most of the time and does great most of the time.) I asked him to get me 100% Whole Wheat flour, which I've used plenty of times. He came back with the King Arther brand that I usually use, but instead of being the 100% whole wheat flour is was white whole wheat flour. The bag says it's basically the same except it is white. Is it really the same, especially nutritionally? Thanks!

what is white whole wheat flour? awesome lol

it is the same nutritionally I believe, it is just made from a different wheat berry, is much lighter in flavor, texture and weight so is much more like standard AP flour but with the added benefits of WW flour. I love it, keeps everything light and fluffy!

Yup, just a different variety of wheat. There are TONS of varieties. Red, white, winter, spring, hard, soft, etc.
I use hard white winter wheat for bread and things and soft white winter wheat in cookies and pastries. It should work just as well as what you're used to.

Thanks! I had heard of it before, but I always thought they were trying to pull something over on us. I hope my husband likes it better. He fights me on using Whole Wheat.

We prefer white whole wheat (I grind my own wheat). I have a bunch of hard red wheat, but it is stronger in flavor and the kids don't like it, so I just mix a little of that in with the white wheat just to use it up...then they don't notice.

so when using a recipe that calls for all purpose and whole wheat can you use the white whole wheat to replace the all purpose?

It depends what you are making. With bread, I usually add gluten so it will hold together better. With muffins and quick breads, that isn't as necessary.

I do the same. A little bit of vital wheat gluten in place of flour (1T for each C flour) will help breads rise better. In everything else I just do a straight substitution of white whole wheat for the all purpose flour.

thanks ladies! I made bread with it- white whole wheat and whole wheat together and it still tastes good but yeah, didn't rise a lot so i'll try adding the gluten.
