I'm so hungry!

And I think I know why.... The past few weeks, I have been a total foodie, cooking up all kinds of dishes. This week was a little crazy and I didn't put together a menu like I had been doing and I just didn't have time to cook so I've been doing the usual grabbing whatever for food- cereal, "whole" foods, nothing that I prepared. And I think my tummy was really liking the cooked dishes Tomorrow is Saturday, grocery shopping day (well, since I found a new grocery store that I really like! Previously it had been wait until the cupboards were bare and go then!) so that means, I need a new menu plan.
I love vegetarian food, easy recipes, and especially slow cooker recipes. And of course, inexpensive! So if you have something you'd like to add, please do!!!!

Oh yeah I'm doing mac and corn now because its all I have that I can quickly scrape together and hopefully fill my stomach. Plus, I think the boy is getting sick of cereal DS has had a yucky cold this week and I have been holding him pretty much all during waking hours. thankfully, he has been sleeping well at night. so far anyway.

veggie enchiladas! corn, black beans, diced onions, squash, mushrooms and spinach all sauteed up pretty in EVOO. (start with the veggies, add beans and corn (drained) when the veggies are brown, toss in spinach last) then roll in corn tortillas and top with your favorite enchilada sauce. Hatch is awesome if you can eat gluten. Of course sourcream and cheese if you can have dairy! (we cant have either :giggle) Bake @350* for 20-30 minutes
