pastelon! In a buttered square baking dish: layer cooked mashed potatoes (or mashed yellow plantains if you can find them ), cooked ground meat, more mashed potatoes, and put cheese on top. Cook at 350 for 15-20 minutes (until cheese is golden but not burnt). It is YUMMY!

You can make it also using cornmeal:

Time: 1.5 hr. Serves: 6 Before starting to cook: Sift cornmeal and add the raisins. Soak the cornmeal and raisins in 8 cups of water for an hour. Oil a 2-inch tall baking pan (7 cm). Heat up the oven to 550 °F (300°C). To peel the tomatoes (if you used them fresh), make a cross cut on the bottom and drop them in boiling water until the skin shrinks and starts to peel off. Peel and discard the seeds. Ingredients: * 2 cups of cornmeal (polenta can also be used) * 1/2 cup of sugar * 1/2 grated cheddar cheese (mozzarella is also a good choice) * 2 tablespoons of olive oil * 1/2 cup of raisins (optional) * Salt ~ Filling * 2 lbs of ground beef * 1 small red onion, diced * 1 green pepper, diced * 2 tablespoons of olive oil * Pepper * Oregano * Salt ~ Tomato Sauce * 6 cups of fresh , or canned tomatoes, peeled and diced * 1 tablespoon of sugar * 1.5 cup of water * 2 tablespoons of olive oil * Oregano * 1 garlic clove, crushed * 1 small onion, diced * Salt Preparation: To make the tomato sauce: 1. To prepare the tomato sauce heat oil and sautée the tomatoes, garlic, onion and a pinch of oregano, add water and sugar. Simmer over low heat until you obtain a thick (chunky) sauce. Add salt to taste. You should obtain about 5 cups of sauce. Reserve. ~ To make the filling: 1. In a shallow pan heat oil. Sautée the onion, bell pepper and garlic, adding a pinch of oregano. Add the ground beef and stir so it cooks evenly. When the meat starts to release liquid, add two cups of tomato sauce. Simmer over low heat until most of the liquid evaporates but it is still juicy, add salt and pepper to taste. Remove from the heat and reserve. ~ To cook the cornmeal: 1. In an iron pot mix in cornmeal, sugar, salt and two tablespoons of olive oil. Cook over medium heat, stirring constantly. When it comes to the boil lower the fire and continue stirring until it starts lifting from the pot. Remove from the heat. ~To assemble: 1. Spread 1/2 of the corn mixture in the baking pan,. Cover it with 1/2 of the cheese, then the meat. Spread the remaining cornmeal mixture and cover with the other half of the cheese. Bake it until it turns golden brown. 2. Let it cool for 5 minutes before serving. Serve with the tomato sauce and green salad (baby arugula with an olive oil vinaigrette is perfect for this).

Mom had a "stroganoff" recipe which was really good (though not really like authentic stroganoff). You mix a can of tomato and a can of cream of mushroom soup into the cooked and drained ground beef. Then add cooked egg noodles. Very easy.

This is a very frequent meal here. DS(15) made it in his Foods class and brought the recipe home because he loved it. It's easy, fast, and delicious and we all love it (and it makes a LOT of food - use a deep frying pan).

Mexican Beef Skillet
1 lb hamburger
oregano (I think it's a Tbsp - I just shake the container several times, lol)
celery (2 stalks, chopped)
1 c. picante sauce
1 c. corn (I use a whole can because it's easier)
1 can cream of mushroom soup
2 cups elbow pasta
shredded cheddar

1. Start cooking the pasta so that's going in the background while you cook/combine the rest of the ingredients.
2. Brown the hamburger with oregano and celery (drain fat)
3. Add picante, corn, soup, and cooked pasta and mix well
4. Sprinkle cheese over the top and let it melt

tater tot hotdish, (1lb burger, 1 frozen pkg mixed veggies, 1 can cream mushroom soup mixed with 1/2 can milk. Pour into 9x13 pan top with tater tots bake 350- 45min.
