TOFU...

I got it... now what..lol.. how do you like it?? and keep in mind.. I have a 4 year old.. a almost 3 year old..and 7mth old.... my dh eats just about everything... but looked at me nuts when he seen Extra firm tofu....lol

I love to sneak tofu into our food! :wink: Try a tofu curry, really easy if you get the pre-made can of sauce from Patak's, especially the cilantro coconut. also, cut it up and put it in Chili instead of hamburger. cut it up finely, saute with the onions, pepper and garlic and season as usual. I've tried it in stirfry but got a "ew, is this tofu? honey!" hmmm.....pretty much any Indian food (we love Indian food) where I can disguise it. Like, instead of spinach and cheese (patak paneer?) I do tofu and spinach. As far as "regular" American food, can't help you there....

I thought it was silly when people told me they freeze their tofu, but it really does make a difference. Freeze, thaw, cut into slices and smoosh between two towels or have a place for the water to escape. We really like ours baked with buffalo sauce, but you could put any sauce on it.

I make smoothies with tofu. Plain yogurt, frozen berries or peaches, fresh bananas, silken tofu and a bit of orange juice concentrate. When I was pregnant I also put in protein powder, powdered milk and/or wheat germ. Our whole family loves these and DS can be pretty picky.

These are supposed to be like the ones at PF Chang's and those are delicious!


Tofu Lettuce Wraps

Ingredients (use vegan versions):

1 head lettuce or Napa cabbage
1 pkg extra firm tofu (drained)
2 1/2 cups chopped sh*take mushrooms
3 tablespoons chopped garlic (fresh)
2 tablespoons chopped ginger (fresh)
red pepper flakes
tamari or soy sauce or Braggs
salt
pepper

Directions:

Dice the tofu into small bite size squares. Spread them out on a cookie sheet. Sprinkle with salt , pepper, red pepper flakes, and soy sauce. Bake for 35-45 minutes at 350.

When that is almost done, heat up wok or frying pan and throw in the chopped up garlic and ginger. Fry for about 5-7 minutes until they are softer. Throw in the sh*takes. At this time you can add more soy sauce , usually about 4 or 5 shakes. Also, if you’d like, some more salt and pepper and red pepper flakes.

Cook about another 10 -12 minutes, then add the tofu and finish up the cooking - about 2-5 minutes.

Wash and dry the lettuce/cabbage and pull off pieces about the size of your palm.

Spoon the mixture into the leafs and roll them up!

my favorite thing to do with tofu is to cut it in cubes, drain it, they sautee it in olive oil. flip it so that each side browns. when all sides are browned, spash it all with balsamic vinegar and soysauce. then toss it with nutritional yeast. I typically mix the yeast with some red pepper flakes, sesame seeds basil and whatever else sounds good. this is soooooo yummy! my kids (2 and 4) love it too!

I like tofu. My favorite way to cook it is to grill it (first marinade it). It tastes so much better this way.
I also make it into a yummy dessert by blending it with some sugar and melted chocolate.
I agree that putting it in Indian curries is good too.
Also, the Horizons Cafe cookbook has a lot of really good tofu recipes in it.
