Seriously, there is only so much I know how to do with veggies and tofu (lol).

Does anybody have any really yummy vegetarian or vegan recipes?

And the easier, the better.

Well, this is really easy for us for Andy. I just cut up some extra firm or firm tofu into small cubes (like cheese cube size), marinate a couple hours in a soy sauce/lemon juice mix (turning every 1/2 hour to coat all sides). I then add a little bit of olive oil to the bottom of our wok/pan and just fry them until browned (about 20 min.). Sometimes I add toasted sesame seeds to the mix. Andy will eat them straight from the plate that I put them on to cool! I also make a pasta dish with olive oil, garlic, spinach, tomato, black olives and rice noodles and add the marinated/cooked tofu to it! It's YUMMY!

Also, I make a Gluten-Free pizza crust and add rice shreds (name of product is rice shreds) instead of cheese to the pizza and it melts pretty well!

vegweb.com has all sorts of yummy (and mostly vegan!) recipes! They have reviews too so you can kind of test run before cooking!

I second vegweb.com. Plus The Vegan Planet cookbook is awesome. I borrowed it from the library before I bought it.

I have a ton of vegetarian cookbooks. My 2 favorites are Horizons Cookbook (lots of good tofu recipes) and La Dolce Vegan (especially the "meatloaf"). Also, there are loads of vegetarian recipes on the internet.

oh,try this one,delicious
boil a small bag of elbow noodles
boil a small bag of broccolli florets
once this is done get a cassarole dish
add them all together then add 2 cans of cream of broccoli soup
1 can milk and 1 bag of shredded velveeta cheese,mix it all together
and top the cassarole with sharp cheddar bake for 10 minutes
delicious broccoli and cheese cassarole

i'm not a vegitarian so add ground chuck,but for holidays i make 2 one with the ground chuck and 1 without,since it is such a big hit with my kinfolk.

I just made this tonight, it was superb. I got it off of vegweb.com.

Black Bean and Sweet Potato Enchiladas

Ingredients (use vegan versions):

8 corn tortillas
2 medium sweet potatoes or yams, cooked (nuked 5 mins) and diced
1 can black beans or equivalent
1 yellow onion, diced
1-10 jalapenos, seeded and diced
1 tablespoon minced garlic
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon chile powder

Directions:

Water saute the onions; after 3 minutes add garlic; after onions and garlic are softened, add everything else and cook down until the consistancy is rather thick.

Heat the tortillas on a dry griddle, or nuke for a minute to soften (keeps them from tearing when rolled). Spoon filling on tortilla in an of-center strip, and roll. Smear a bit of filling on the inside edge to seal. Place on cooking-sprayed baking dish, seam side down.
