I tend to make heavy hearty meals,but I want some great recipes for summertime.

My dh really likes these chicken blt type sandwiches I make. They are pretty light and great for a nice day to eat outside.

boneless chicken breasts (one for each person)
Whatever seasoning you like on your chicken. We like, onion powder, garlic powder and italian seasoning blend.
cheddar cheese (shredded or slices)
cooked bacon (a few slices for each sandwich)
lettuce
tomato
sandwich rolls or hamburger buns

I cook the chicken breasts on the stovetop in a pan with a little bit of olive oil. You could also cook them on a grill or baked in the oven (this would take longer). On the stove I cook them about 5 or 6 min on each side, then
I top with cheddar cheese and cook until it melts. Then make your sandwich topped with bacon, lettuce and tomato.

I make homemade potato fried baked in the oven with salt and italian seasoning to go with and a pickle for me (dh hates pickles ) You could serve with whatever you like.
