A tasty way to cook/serve a whole chicken and eggplant???

I have a whole chicken to cook for tomorrow's dinner, and I am looking for some ideas!! Seems like I can't ever get chicken tasty enough!!

And then I have an eggplant which I've never had nor cooked....HELP!!!

Can't help with the eggplant, but here is the best chicken recipe in the world. I promise. Easy too.

Lemon Chicken (doesn't taste anything like lemons though)

Ingredients:

-whole chicken
-2 lemons
-salt
-pepper


Directions

1. Preheat oven to 350 degrees.

2. Wash the chicken thoroughly in cold water, both inside and out.
Remove all the bits of fat hanging loose. Let the bird sit for about 10
minutes on a slightly tilted plate to let all the water drain out of it.
Pat it thoroughly dry all over with cloth or paper towels.

3. Sprinkle a generous amount of salt and black pepper on the chicken,
rubbing it with your fingers over all its body and into its cavity.

4. Wash the lemons in cold water and dry them with a towel. Soften each
lemon by placing it on a counter and rolling it back and forth as you
put firm downward pressure on it with the palm of your hand. Puncture
the lemons in at least 20 places each, using a toothpick or fork.

5. Place both lemons in the birds cavity.

6. Put the chicken into a roasting pan, breast facing down. Do not add
cooking fat of any kind. This bird is self-basting, so it won't stick to the pan. Place it in the upper third of the preheated oven. After 30 minutes, turn the chicken over to have the breast face
up.

7. Cook for another 30 to 35 minutes, then turn the oven up
to 400 degrees, and cook for an additional 20 minutes. Calculate between
20 and 25 minutes total cooking time for each pound. There is no need to
turn the chicken again.

Ta da! That's it! It is seriously the best chicken I have had in my life!

The only way I've ever cooked a whole chicken is on the rotisarie (sp) and to be honest my hubby does it.

Some people use a can of beer and put it in the cavity and cook it on the grill...never tried it myself, but I've heard its really good. Its called a drunken chicken.

Here is a link to the Chicken Rocket it does the same thing as the beer can, but you can use anything in it....wine, marinades, etc. If you know someone who can weld you can make one pretty cheap I think.

I don't have a rotiserie, maybe I should invest in one. And the drunken chicken sounds interesting!

I've bought 2 lemons and cleaned my chicken, I'll try that recipe first- so easy!!

Eggplant parm is always good.

I slice and skin the eggplant.

Mix one egg white and 2 tbsp water.

Dip the eggplant and then put in bread crumbs, bake on foil sprayed with cooking spray so it gets crispy.

Layer it with sauce and mozz and top with some parm. Fresh basil helps also.
